Jumbo shrimp (1pound), dried oregano (1tsp), lemon zest (2tbsp), chopped garlic (3cloves), green pepper, julienne cut (1small), zucchini, julienne cut (1small), diced tomatoes (1can), dry white wine (1/2c), fresh chopped Italian parsley (1/4c), portabella mushrooms (8baby), carrot julienne cut (1small), red pepper, julienne cut (1small), chopped long green onion (1bunch), butter (1tbsp), dried basil (1tsp), extra virgin olive oil (1/2c).
Method of preparation:
shrimp-alla-specialeTake shrimp, peel it and devein it and then place it in sealed bag. Add oil of ¼ cup in the bag. Mix garlic of 1 clove, basil, oregano and the lemon zest in it. Now seal the bag and keep it in the refrigerator for few hours. Take a frying pan, heat the left over oil in it. Saute onion, left over garlic, celery, carrots, green pepper, red pepper, zuccihini and mushrooms in it until they get soft. Put the shrimp in it and sauté it for about 3 minutes. Add wine and cook it until it gets reduce to half. Then add parsley and tomatoes and heat them. When it gets ready then serve it with pasta or bread.
